Prince Charles' sausages, I think they're called Duchy, are fantastic - free range, organic etc - I buy them from Waitrose whenever they're reduced and shove them in my freezer.

Holmansbridge at Town Littleworth just outside Lewes. Excellent sausages which have received lots of compliments. Pryors in High Street closed down years ago.

I love the sausages from Townings Farm in Chailey. I get them from the Friday Food Market, they are really good value ( much cheaper than Waitrose) & have no preservatives.

Offham "shop" is nice with good people, but I don't have a high opinion of the owners after being tailgated (@40) in a 30 mph zone.
I still go there, but think the owners are toffs; but would love to be proved wrong. Maybe the person had an emergency on the farm? I dunno, but maybe viva Lewes could do a story.

Yes, Frank Richards, and I agree with Annabel (despite the weird thumbs-downs) about Townings Farm's sausages, from the Friday food-market. Also Owena's at the same market, and May's in Riverside. Place is thick with proper sausages, really.........

I wouldn't touch HRH Charles Edward Mountbatten Windsor, Duke of Wales, Duke of Cornwall, wife of Camilla, kilt-wearing, lazy good-for-nothing's sausages with a 20-ft caber.
As if he isn't rich enough, why get more dosh from the prols by making out that he had something to do with sausage manufacture? Next you'll be saying that they work hard.
Probably the best bet is the local butcher, assuming that sausages aren't an excuse for getting rid of all the horrible bits. I did a stint in a butchers shop delivering "lights", "sweetbreads" wrapped up in newspaper - not to mention the brawn, tongue and the other delicacies. Not much to choose between the faggots (the edible sort), the sausages or the pasties when it came to the mincer. Then there's always a nice Fray Bentos "steak" pie, corned beef, tinned frankfurters or Spam. Or Walls "sausages"
As for farm shops, about as authentic as French markets. A bit like a trip to the garden centre to buy a plant pot.

When buying sausages from butchers ask if they put preservative in them. All "fresh" sausages will have preservative in them. They have to do this to prevent the meat breaking down. Vary few places sell preservative free sausages. All preservative free sausages will be frozen as soon as the sausage is made. There is a farm in Hadlow Down which sells preservative free sausages which are 95% meat with no preservatives. www.coopersfarm.com

Yes they are. They are frozen as soon as they are made. No E numbers used just meat and seasoning.

The main role of the preservative is to prevent the growth of harmful bacteria. In particular, saltpetre is used in small amounts to prevent botulism ("sausage disease"). It can be left out, but the resulting sausages have very short shelf life unless frozen. Otherwise, traditional sausage meat is just minced meat with 1.5% salt, and your choice of other seasoning. Rusk is optional, mainly introduced in the 1914-18 war period to make thinkgs go further.
Richards and May's Farm Cart do very good bangers, as does the game stall at the farmer's market. Holmansbridge and the butcher in Ringmer are also highly recommended.
It can be great fun making your own, if you have a mixer with the right attachments. May's sell natural casings.

I live next door to Offham farm shop and whilst Sam and the team make brilliant bangers the Harmers charge you a pretty penny for them! If you're looking to treat yourself though give them a go, they are quality.

QUOTE OF THE MOMENT
I like the fact it's safe enough to leave windows open and shops don't need to put grills up at night.
