The trouble with the Rainbow was that it had loyalty from people to how it had been; the Lloyds building wouldn't have that legacy to contend with. But I don't think Lewes itself has much demand for top-end food at top-end prices, although if somewhere is really good there'll be enough of a catchment area for it to succeed. Don't know if it's because people are too mean here, don't have enough disposable income left over after paying the large mortgages, too many toddlers, think they can do better at home in their fancy kitchens, or what...
