Thai restaurant in old Sussex Express building on School Hill. Haven't been but have received their menu through my door. Seems quite expensive.

Is it a chain or privately run ? No indication on their takeaway menu.

It's a small chain, however I think I will still rather go to Erwan and Palin, just because they are independent, and I would like locals to support me if I owned a restaurant.

Do regulations permit corkage charge in unlicenced business premises? I thought corkage applied to licensed premises only.

In the 1990s a mate of mine was looking at flats in a part of London to buy. The estate agent told him the area was going up. How can you tell that, my mate asked. 'It's got TWO Thai restaurants.'

Clifford - that's a brilliant story. You boring tool.
Taff - very few licensed premises accept BYO. So how can that be the case?
Their menu is so full of typos and errors that it doesn't bode well on their kitchen. If genuinely Thai owned, it may be understandable. If it's not, then it's inexcusable.

@Local - That was a bit harsh. Do you and Clifford have a history? Perhaps you should make things up over a Phat Prik at the Lemongrass.

It's bonkers how expensive Thai food is in the UK across the board. Curry is massively overpriced in the south too, take me back to Bradford!

ClarifiedButler: Prices relate to the cost of premises and also to what people are willing to pay down south. As an example the old pet shop in the Cliffe, I believe, was paying £44,000 a year in rent and rates. If that was a curry house in Bradford you would have to sell an awful lot of curries to make it pay.

Wouldn't that stack up then local? To discourage people wanting to drink their own alcohol on licensed premises. Does anyone know if unlicenced premises can charge corkage on bgo or not? Local need not respond.

An unlicensed place can indeed charge corkage, you're using their glassware and so forth so it's not entirely unreasonable. I know some incredible chefs who can't spell for toffee so not really sure what Local's point was. The chefs in a restaurant tend not to be in charge of printing the menus anyway...

Is that the same as entirely reasonable or not quite. Can you define the degree of reasonableness ? Not unkind regards.

Had lunch there today - the set tapas lunch menu was good value and very tasty. Also had a Singha beer and green tea ice cream - lovely. The only annoyance was being asked if I was enjoying my meal by four different members of staff within ten minutes. Yes I am - bugger off!
I shall make sure I don't desert Pailin though, as they've always had great food and service.

We also had lunch there today - set menu, 3 good size tapas for 10.95. Prices seemed average for Thai. Very nice ambience, attentive staff, food good. And the decor is very relaxing, nice outlook onto a patio area, not squished in like erawan. We will go back and try the evening menu too. Great addition to Lewes. I've only had two meals at Pailin and was disappointed each time - they will have to improve.

It's about attention to detail, stupid. Care over communications, care over writing menus, care over seasoning food, care over sourcing, care over stock rotation, care over kitchen hygiene, care over staff training, care over bill accuracy, care over customer service, care over cost control. Are you too stupid to see the link? It's a nonsense to make facile comments about chefs' spelling skills, as you should - and possibly do - know.

So what you're basically saying then Local is that contrary to perceived wisdom, a quick glance at the cover is actually the best way to judge a book? Could it be that you also have evidence of rolling stones gathering moss and stitches made in time leading to an additional nine stitches being required in the future rather than saving those nine from being required?

No, you bell-end. I'm not saying that, as you full well know. I'm saying that you should be aware of any short-cuts or deficiencies in any brand or business, because they can easily be representative of other shortcomings. So don't be impressed solely by a nice sign or a smiling waitress - look for the weakest link in any organisation, and you'll be able to judge its true strength and value.
