I wonder how old supermarket fish is and how far it's traveled to get to the store. I bet it wasn't in the sea the day before, more like a week before. In fact even on the fish counter in Waitrose a lot of the fish has been previously frozen (look at the price labels) so not even fresh as you would expect. You may as well buy from the freezer cabinet
