Or, as "they" would have you believe, its simply the condensation that forms when the very hot, very damp, exhaust plumes from jet engines hit the very cold atmosphere above 30,000 feet or so (actual lowest height at which they form varies with air temperature/air pressure, and ambient moisture levels etc). The cold air causes the moisture in the exhaust to condense, and even freeze, into tiny droplets or ice particles of water. It's the same effect a you see when you exhale on a cold fresh winter morning, and your breath forms a cloud of mist....
But of course, the stuff on the inter web is always right, it's al a secret conspiracy to spray mind-control chemicals across step globe. There are even photos showing aircraft full of barrels of liquid, "waiting to be sprayed" ...though those photos actually show the method airliner manufacturers use to load aircraft with a weight equivalent to a full passenger load on test flights.
Still, Anna Vinton, if any doubt I suggest you fold yourself a neat tinfoil hat and hid under your stairs, just in case...

P.S. If you really are worried about what THEY are adding to those sinister "chem-trails" (rolls eyes), you should perhaps be even more worried about what THEY are add to road-traffic fuels - why spray stuff at 30,000 feet where the weather system might blow half of it away over the unpopulated areas when THEY could be using motor vehlcles to disperse it right in the heart of the population centres.... ;-).

Of course, the condensation trails are more visible/obvious on a clear 'blue sky' day, but they are there on overcast days too, but they are simply hidden by the lower clouds between the ground and the con-trail level.
Changes in daily flight patterns, and flight routings/timings will also affect how many appear.
Lewes sees many high-level trails as transatlantic flights between northern US/Canada and Western Europe tend to fly "great circle routes" which are the shortest (and thus most economical/quickest) distance between two points on the planet - so many of those flights tend to track up towards Greenland and Iceland, then swing across the far North Atlantic before running pretty much down the length of UK before they head out to France/Spain etc. This explains why many of the high level, and seemingly often longer-lasting con-trails, run North-south over this area.
No offences meant re tinfoil hats, but far too much rubbish on the 'web is too often accepted, and passed on, as "truth". Doing a little research of one's own can often quickly debunk nonsense such as "Chem trails" conspiracy - though of course, there is no ultimate way of proving or disproving what is on the 'web is rubbish and what is truth. Each individual has to make a choice as to what they choose to believe - but far too many don't even try to make an educated choice.
