Lewes Community Kitchen listings

In Jan 2012, we took on a semi-derelict industrial unit on the riverside in Lewes East Sussex. With the help of a few friends and lots of faith and hard work, we have created a permanent base for Community Chef in the form of Lewes Community Kitchen. We run in house cookery and bakery classes, workshops, cookery leader training and food hygiene training for private individuals, community and commercial organisations. Our event catering operations are now based here as is the Lewes Bread Club and Micro Bakery which produces high quality, community supported Real Bread. We host lunch and supper clubs, food and film nights and local community events. We also rent the kitchen out to local food projects as well as cooks and artisan bakers who need occasional use of a commercial kitchen. This training will help you to:
- plan a cookery course, club or community food project
- be a better cook
- understand more about the food we eat
- support others in improving their cookery and everyday nutrition skills
- work effectively with groups and share your enthusiasm for good food
- develop a social enterprise
- make healthy cohesive communities
- create a sustainable food system

In addition to the two days of training, participants receive ongoing mentoring and support.

Includes lunch, refreshments and food to go.

Emmanuel Hadjiandreou is an internationally renowned baker and gifted teacher.

In this 3 day intensive course you will gain the practical skills and understanding to confidently bake a range of breads and leavened products.

You will bake with both sourdough and regular yeast, a range of flours and enrichments. Emmanuel will teach you fundamental bread baking crafts including kneading, fermentation, shaping and oven control as well as handy tricks of the trade. He will cover all of the practical, logistics and technical skills needed to bake well with confidence.

You will learn to make a range of dough products including traditional white, brown and malted loaves and rolls and well as continental breads including baguettes, levain de campagne, ciabatta, dark rye sourdough and german multigrain bread.

A delicious seasonal lunch, snacks and refreshments will be provided.

This course is suitable for beginners as well as experienced bakers.
