Off the top of my head there's the:

1. Community Choir
2. The Paddock Singers
3. The East Sussex Bach Choir
4. The Pro Musica chamber choir
5. The Esterhazy Singers
There's also Voiceworks, run by dynamic operatic tenor and teacher Paul Kelly and his wife Carol. They're an interesting mix of choir, music and singing lessons, so if you want to learn about singing techniques and how to read music, they'd be a great choice.

I've probably missed some off but those are the ones I know about. The community choir does pretty much everything and doesn't audition. The Paddock Singers I think are just women, the East Sussex Bach choir specialises in baroque music (so lots of Bach and Handel) and does audition although they welcome newcomers with some choral experience who'd like to try out first. The Esterhazy Singers are a small and very expert chamber group with very high standards who tackle pretty much anything from the "serious" repertoire. I haven't heard the Pro Musica in action, but I'd be willing to bet that they're good too!

The ESBC rehearses on a Saturday afternoon, but I don't know about the others. Come and join the singers of Lewes: it's very good for the soul.

Outside of Lewes, there's the BREMF choir (Brighton Early Music Festival) and the Brighton Festival Chorus. BREMF specialises in early music, and the BFC is a symphony chorus so larger and tackling a core repertoire of Beethoven onwards, probably.

For further information, rather than trying to put individual links, I think you'll find each of the organisations easily enough if you google their names.
