Lemon and sugar definitely - but it has to be proper squeezed lemon and not that stuff out of a plastic lemon.

I've always said Golden Syrup, sugar and fresh lemon juice.

Does anyone else remember the pancake restaurant there used to be in Brighton? It was called Cripes I think and was up near Clifton Terrace. Did a big range of savoury and sweet pancakes, all of them really, really nice. I was rather upset when they closed down. I'm also rather fond of the mushroom and ricotta crepes at Prezzo although the best savoury crepe I ever had was a pesto and pinenut one in the Citadel in Budapest.
