Check the Tourist Info centre - usually there are many guided walks during the summer months covering many different subjects. I once did a fascinating tour of the cemetaries in Lewes althoug I'm not sure if that is still on the agenda.
Otherwise, nip into Sussex Stationers or the library and obtain some of David Ascott's books - a local author with a leaning towards history and interesting tales.
