@especially pointless: Let me put it another way...They have a very large menu so to keep food fresh and in the best condition they would need a good turn over of customers, especially as raw fish doesn't have a long shelf life. Raw fish in sushi needs to be freshest and highest quality to minimize the chances of food poisoning.
