The two areas are different in feel and layout. Southover has a lot of historic buildings - lots of Tudor, sometimes with Victorian façades, along the High St, and lots of narrow streets and alleyways. There are lot of open spaces nearby too, and easy access to the downs as well. The station is also close.
Wallands has a core of big Victorian and Edwardian houses set on wider streets. There are also a lot of 1930/50s semis and some Victorian terraces. It's a bit further from the station - perhaps half an hour if you're right at the top of Gundreda Road. There's good access to the downs, but not so much public open space.
You probably have already discovered this, but Lewes has a lot of small houses/cottages/terraced houses but four bedrooms are harder to find in both those areas without spending very big bucks indeed.

Lewes is nice. Quite steep streets in some places. And very small by Glasgow and Brighton standards. But I like it.
