Mount Caburn is my favourite, but you can also try beaches, Cuckmere Haven, Stanmer Park, Firle Beacon or even Convent Field if it's not being used for sport.

Yep, if I wanted to stay in Lewes I'd use The Convent Field (behind the Dripping Pan) or go up towards the race course.

There are several ways of getting to the field next to the race course:
up to the brow of the hill on Nevill Road and up the "motor road", the field is to your left just past the allotments
up Spital Road, cross over at the prison and go up the track behind the prison, keep going right and uphill and you will see the gate, the path runs alongside the gallops that are part of the old race course

from the access point in Firle Crescent, there are steps up between about numbers 8 and 10 or poss 10 & 12
It is a perfect field for kite flying, plus you get really nice views from the top

If you're trying to stick up a power quite I wouldn't go up onto the Downs, I've done that, and whilst it can be fun the opportunities to take off and go careering down the slopes are a bit too frequent.
The Convent field can be ok, depending on type of kite. The trees can kill off the wind in some areas making the wind window you have quite a bit smaller (no low loops to really get some pace).
I must admit I haven't looked too much but am yet to find a decent place to fly my kite around here. I always found sandy beached to be the ideal place to let loose and they're few and far between in Sussex.
If you do find somewhere worthwhile please let me know as I'd love to dust off my old Flexifoil

I used to go up to the downs every day (weather permitting) and I never had an issue with it been dangerous or been lifted. Sometimes id be 10m from the cliff at beachey head and feel fully in control. Wel I went to look at the field Annette suggest at the back of the prison and that seems the best one so far. No trees plenty of wind and a good sized smooth field. Dunno when im going t go but il let u know how it is. Could maybe meet u there one day if ur up for it.

Mary J - you are actually talking about an actual Kite right? With a user name like Mary J and a title, High as a Kite - could get a little confusing!
