Fred, no need for a permit as Lewes has town-wide open streets policy for all kinds of sellers on the fifth. Just rock up pretty early to claim your spot as seasoned burger van types will get the best places early. If I were you I'd park up outside the White Hart Hotel as the crowds round there are huge and you'll make a killing.
