Ten of us were invited to a practice run at the restaurant last night and sampled much of the food (an easy thing to do when you only have to pay for the alcohol!). I very much enjoyed my olives, squid rings, charcuteries and fillet steak. The fillet steak, medium rare was cooked to perfection and came with some lovely sauces (I'd recommend the cheese and chile). The squid rings could have been fried at a slightly higher temperature but we're still good. The charcuteries, both meat and fish, were excellent. My wife enjoyed her tuna salad too. The bread and the various dips were great.

The point of the practice nights is that the lucky guests feed back so Aqua Italia can get it right before they start charging. We fed back a few things, all teething problems that I'm sure will be sorted out by the time it opens to paying guests on Wednesday.

Overall I think the restaurant will be popular amongst Lewisians. Aqua have created a very comfortable space for eating in. The prices are very reasonable for what you get and there's a good range of food too. They also do a range of offers, including discounted menu for early evening.

I think it neatly fills a gap in the Lewes restaurant market and we'll definitely be going back.
